Sweet Potato Brownies


Sweet potato brownie is the best afternoon delight to have with your tea or coffee. It's fudgy and chocolaty and delicious, yet made with only healthy ingredients, which makes it an awesome guilt free dessert.

After one bite from this brownie- you will never go back to sugary and gluteny brownies.

This healthy recipe is flourless, sugar free, dairy free, and gluten free.

Ingredients:

2 sweet potatoes

3.5 oz (100 grams) dark chocolate

1 tbsp coconut oil

1/4 cup pure maple syrup

3 eggs

1 tsp vanilla extract

2 tbsp cocoa powder

1 tbsp almond flour

1 tsp baking soda

Instructions:

*Preheat oven to 325 degrees.

1. Heat the sweet potatoes in the microwave for 8-10 minutes or until soft. Peel and puree in a food processor.

2. Heat the dark chocolate and coconut oil in a bowl in the microwave until melted. (I heat 30 seconds and mix, then another 30 sec and mix, then again if needed. This way you will not burn the chocolate)

3. beat the maple syrup, 3 eggs and vanilla extract in a mixing bowl.

4. Add the melted chocolate into the bowl and mix.

5. Beat the sweet potato puree into the bowl.

5. Add the cocoa powder, almond flour and baking soda into to the bowl and mix.

6. Pour the mixure into a small baking pan and bake for 40 minutes.

It's simple, and grand.
