Paleo Carrot Cake
Carrot cakes are irresistible. The combination of sweetness and freshness and softness is just to magical and delicious to say no to.
My husband brought a carrot cake from his office the other day, and of course we are talking about the sugary and floury type of carrot cake. I was so jealous as I watched him eating the cake with the cream cheese frosting. Then I decided I just have to find a Paleo recipe for this cake.
What I like about Paleo recipes is that its usually so simple. You throw everything in a food processor and you have a cake. And gladly- this is the case with this cake. Its really easy, not too much work, and you can have this amazing flourless, dairy free and refine sugar free Carrot cake with cream "cheese" frosting in no time.
Ingredients:
For the cake-
1 1/2 cups shredded carrots
10 pitted dates
1/4 cup coconut oil
1/2 cup coconut sugar
4 eggs
1 tsp vanilla extract
1/2 cup almond milk
1/2 cup coconut flour
1/2 cup almond flour
1 tsp baking powder
1/2 tsp cinnamon
pinch ground nutmeg
pinch of salt
1 cup pecans
For the cream "cheese" frosting-
1-2 cans full fat coconut milk
2 Tbsp lemon juice
1/4 cup coconut sugar
Instructions:
*Preheat the oven to 350 degrees
For the cake-
1. In a food processor- mix the carrot and dates.
2. Add the coconut oil, sugar, eggs, and vanilla extract and almond milk and mix.
3. Add the coconut flour, almond flour, baking powder, cinnamon, nutmeg and salt and mix until everything is combined.
4. Add the pecans and mix by pulses, leaving chunks of pecans in the mix.
5. Pour the batter into two 8 inch baking pans.
6. bake for 20 minutes or until ready (you can check with a wooden stick) and let it cool down before removing the cake out of the pans.
For the frosting-
1. Put the cans of coconut milk in the fridge overnight.
2. Do not shake the cans before opening. Open the cans and. using a spoon, scrap only the cream from the top. Put the cream in a bowl.
3. Add the coconut sugar and mix with a hand mixer for about 1 minute.
4. Add the lemon juice and mix again for a few seconds.
