Flourless Chocolate Chip Cookies

Who doesn't love cookies?

Cookies are the tastiest snack to have when you crave sweet. It's small, you can control your amounts better, and lets face it- it's just so yummy with a cup of cold milk.

I wanted to find a recipe that would not make me fell bad every time I have one cookie. A recipe that is Paleo and Vegan. Flourless, sugar free, gluten free, dairy free. A recipe that is made only with healthy ingredients, But also, still as yummy as it gets.

Well, I am glad to say- challenge accepted and done!

These cookies are not the best HEALTHY cookies I have ever had.

These cookies are the best COOKIES I have ever had.

Ingredients:

1 cup almond flour

1/2 tsp baking soda

Pinch of salt

1/8 cup coconut oil

2 Tbsp pure maple syrup

1 tsp vanilla extract

1/4 cup chocolate chips (85% cocoa)

Instructions:

*Preheat the oven to 350 degrees F (180 degrees C). Grease a cookie sheet or line with parchment paper.

1. In a bowl, sift together the almond flour, baking soda and salt.

2. Add the coconut oil, maple syrup and vanilla extract and mix.

3. Stir in the chocolate chips by hand using a spoon.

4. Make cookie shape with your hands and put on the cookie sheet, allowing spaces between the cookies.

5. Bake 11-12 minutes. Allow the cookies to cool on the baking sheet for at least 5 minutes before removing them.
