Flourless Coffee Cake


Lets talk about coffee!

Coffee has become such a big part of our lives, that some people can't go through the day without having at least 5 cups of coffee. In the morning. And 5 more in the after noon. In fact- some people can't even open their eyes, not to mention speak, without having their coffee first. And usually- we look for something to have with our coffee. Wether if its in the morning, afternoon, or whenever we choose to have it.

Breakfast is tough for me. I need to eat something light and sweet in the morning with my coffee. I can't eat a big savory breakfast right after I wake up. This something sweet can't be too heavy, otherwise I'd just want to go to sleep again.

I was trying to make the perfect morning cake to go with my coffee, and then I realized- what could go better with coffee than a light, soft, delicious coffee cake with an awesome flourless crumble topping?

So there it is- flourless, sugar free, dairy free, PERFECT coffee cake!

Ingredients:

Cake-

4 eggs

1/4 cup coconut oil

1/4 cup pure maple syrup

1/2 cup coconut flour

1/2 cup almond flour

1 tsp baking powder

1 tsp ground cinnamon

1 shot espresso

1/2 cup almond milk

1 tsp vanilla extract

pinch of salt

Crumbs-

1/4 cup almond flour

1/4 cup coconut flour

1 tbsp soft coconut oil (not melted but not too hard)

Instructions:

*Preheat the oven to 350 degrees

1. In a mixing bowl- mix the eggs, coconut oil and maple syrup.

2. Add the coconut flour, almond flour, baking powder and cinnamon, and mix.

3. Add the espresso, almond milk, vanilla extract and salt to the minute and mix.

4. For the crumbs- In a small bowl, mix the almond flour, coconut flour and the soft coconut oil with your fingers. (If the coconut oil is melted, try to put it in the fridge for just a little bit. If it's too hard, put it in the microwave until soft).

5. Pour the cake mixture into a loaf baking pan.

6. Spread the crumbles on top.

7. Bake for 40-45 minutes.

It's simple, and so perfect, you might want to have it with your afternoon coffee too (-;
