Healthy Triple Pudding


One of my favorite desserts is pudding. All kinds of puddings. I love the texture, I love the smoothness, and of course- i love the sweetness.

I must say- I was surprised to find out how simple it is to create the healthy version of my favorite desserts. In this case- It is plant based and only requires a food processor or a blender. It's healthy, vegan, paleo, and completely guilt free!

I call this dessert Triple pudding because I made it with three layers. First- Chocolate avocado pudding. Second- Chocolate coconut mousse. And third- Coconut whipped cream. The only bad thing about this dessert is that it is almost impossible to stop eating it :)

So how do we make this heavenly dessert?

Ingredients:

*2-4 servings

2 ripe avocados

1 ripe banana

1/4 cup almond milk

1/4 cup maple syrup

2 tbsp cocoa powder

2 tbsp melted dark chocolate

1 tsp vanilla extract

Instructions:

1. For the Chocolate avocado pudding-

Put the avocados, banana, almond milk, maple syrup, cocoa powder, melted dark chocolate and vanilla extract in a food processor or a blender, and blend. (Wait, what? thats it? yup!).

*This Pudding is so good, you can eat it as is. (But the triple is even better, especially when you have guests and you want to impress them ;-)

2. For the chocolate coconut mousse-

Mix with a spoon 1/4 of the chocolate avocado pudding with 4 tbsp of coconut whipped cream.

3. For the coconut whipped cream layer-

Well, coconut whipped cream.

4. Build your Triple dessert! This amount is good for 2-4 single servings.

In a nice clear cup, put the chocolate avocado pudding, then the chocolate coconut mousse and then the coconut whipped cream. there is no need to freeze each layer before applying the next layer.

5. You can serve right away, or keep in the fridge up to 2-3 days.

Now you have a mouth watering dessert that not only tastes divine, but also looks very impressive.
