Paleo Chocolate Tiramisu
My husband's favorite dessert is Tiramisu. This combination of cream, espresso and chocolate is absolutely divine.
I was trying to find a healthy recipe for this dessert, and wow, it was a challenge. This dessert takes a little more work and time than my usual desserts, but the result is amazing, and if you want to impress someone- this is the dessert for you.
There are a few steps to follow for this dessert, and preparation will definitely help. Please notice that the preparation starts the night before you make the dessert.
This Tiramisu is Paleo, flourless, sugar free, gluten free and dreamy.
Ingredients:
4 single servings
For the Cream-
2 cans of coconut milk
2 Tbsp melted dark chocolate (85% cocoa)
3 Tbsp coconut sugar
1/2 cup cream cheese (optional, but would give the cheesy flavor)
For the Ladyfingers-
4 eggs, separated
1/8 cup maple syrup
1/2 tsp baking soda
1 tsp vanilla extract
1/3 cup coconut flour
1 long shot of espresso
Instructions:
*Prepare by letting the cans of coconut milk chill in the refrigirator overnight.
For the Ladyfingers-
15-20 ladyfingers
1.Preheat the over to 400 degrees.
2. In a bowl, beat the egg whites until stiff with a mixer.
3. In a separate bowl, whisk the egg yolks, baking soda, vanilla extract and maple syrup until combined.
4. Add the coconut flour to the egg yolks mixture and mix.
5. Add 1/4 of the egg whites to the mixture and fold it in with a spatula. Add the rest of the egg whites and fold in until smooth.
6. Pipe out 2-3 inch long cookies with a round piping tube on a parchment lined baking pan.
7. Bake for 12 minutes or until cookies are golden.
For the Cream-
1. In a mixing bowl, beat the cream cheese until smooth. (If you choose not to use cream cheese skip this step)
2. Take the coconut milk cans out of the fridge. Again- do not shake the cans. When you open the cans you will see that the cream and liquid are separated. With a tbsp, scrap out the thickened coconut cream from the top, and leave the liquid in the can. Add the cream to the cream cheese and beat to combine.
3. Add the melted dark chocolate and coconut sugar and beat for about a minute or until smooth.
Build-
1. In a nice clear cup- put the 2-3 lady fingers in the bottom.
2. Drizzle the espresso on to of the ladyfingers, enough to soak them.
3. Add a layer of the cream on top.
4. Soak 2-3 more ladyfingers in the espresso (really soak them until soft) and put on top of the cream layer.
5. Add another layer of the cream on top
6. Top with cocoa powder
Now you have a dessert to impress any guest!
